Hi,

'product detection': we need to use when we are Actually detecting the product.
For example, detecting  bugzilla, cacti.. etc.

'service detection': we need to use when we are detecting the service instead of specific product. For example services like, ssh, smb, http, ftp, ..etc. here we care for only service which is running
and not the product.

Note: Earlier family 'product detection' was not there. It's introduced on later stage. Before we use to use 'service detection' for all the detect NVTs. So some NVTs has still ''service detection'
which are not updated recently.

while those are using 'service detection family' :

   aas_detect.nasl
