If you use nrpe with xinetd under linux, you can set allow_from in
/etc/xinetd.d/nrpe
If you use nrpe with nsclient++ under windows, you can set ip
restriction in nsc.ini

It would seem your best bet here is to make use of your host based
firewalls.  
I can't help on the Windows side of things but a simple iptables rule or
two 
on your CentOS boxes should be all you need to restrict access to tcp
port 
5666 for nrpe if that is indeed what you are using.
