I've fired up an appliance for testing. I've got it running, on the network and hitting my NTP server. So far I haven't been able to find any instructions for configuring the system to use my enterprise email server. I can google linux docs to find a way to get it working but I'd rather follow an Opsera procedure and keep this demo as faithful to their intended setup as possible.
