I have to say I use Redhat 7.0 and apart from being a tad over-engineered it's relatively simple to setup. The only problem I encountered was getting the X environment setup (LCD monitor with GeForce card). You get a lot for your money with RedHat and plenty of training courses too. (Although you pay for that through the nose if you go to RedHat!!)...
