What I use is sound-recorder.  It will record a little on the quiet
side, but I can fix this as well.  

Just do this: 

apt-get install normalize-audio 

This will give you a package you can do some real audio wonder-working
with to bring the files back up to their normal levels.  

I don't know exactly what the idea is, but it appears that the rec
command in sox will not work right with alsa.  I don't know anything
much about arecord, I have never used it.  However, sound-recorder
seems to do the job.  You can use all of sox except for the rec
command.  Ain't that just the way it goes?  You lose something so
simple to use, but sound-recorder is just as easy.  You might even
adjust the volume by sending the file through sox with a volume
setting for the output file.
