We have grown Miltoniopsis Echo Bay and others and have found that light is one of the key factors for getting correct flower presentation. Keep the plant fairly shady as buds develop and open and they will come out correct. Temperature may also be a consideration so be sure the night temps are around 60 or 62 Fahrenheit at night and no more than 70-75 in the day.
