For an outstanding, although complicated, explanation of the pronunciation of Latin with regards to plants, I would recommend Chapter IV of Botanical Latin, by William T. Stearn. He makes a number of good points, including a great description of the problem of words and proper names from various languages being the roots of generic and specific epithets.
