Chris, I cut a lot of paper, although I would only cut Canson mi Tientes at one or at the most two layers at a time.
The most accurate way I have found is to cut around a template which means I have a lot of different sizes. I use a rotary cutter and a self healing mat and a template. My largest squares are a 17.5" acrylic square that I had cut a number of years ago and an Omnigrid that is 15" from acrylic. I bought a lot of my templates from JoAnn's fabric store one at a time with their 40% off coupons. I have also recently bought templates from Rodney Shimogawa at: http://www.deepbluetemplates.com/ His site is quilting things but if you give him the size and out of what thickness he will give you a price.
