You should create an orion-ejb-jar.xml containing something like this:

<enterprise-beans>
   <session-deployment name="YourSessionBean" timeout="xxx" />
</enterprise-beans>

Check http://www.orionserver.com/docs/orion-ejb-jar.xml.html for all the 
gory details.
