   Just to keep the balance / options open:

Check out Red5 too - it's open source, easy to install (although the documentation, or lack-of, would have you believe otherwise).

The problem you will run into for most of these options is whether your hosting supports / allows you to have these applications running. Each one requires some server side bits and pieces:

HaxeVideo - seems to require a server-side add on, but I don't know anything about that so won't go any further here...

FMS / Flash Comms Server requires the Adobe server-side system - free to play with at home, possibly free-ish to have less than 5 connections, then you have to pay.

Red5 requires you get all sorts of Java stuff set up on your server so can be a pain - easy to install the test version in Windows (just download the Java 1.5 or 1.6 SDK and install that first, then download and install the latest "binary" for your machine from the corresponding link in the "installers" section) http://jira.red5.org/confluence/display/downloads/Red5+v0.8.0+Release+Candidate+1+09.29.2008
Add the JAVA_HOME variable to your environment variables.
Find the batch file / shell script that starts the server (Windows install puts it in your start menu...) Once you have installed & are running red5, visit http://localhost:5080/ <http://localhost:5080/installer> on your computer and follow the link to install the extra demos (you might need to stop-start Red5 for them to install properly). In here are some simple server-side applications that let you connect, video-chat, record streams, etc. You can download the source for these from the red5 "samples" (maybe online somewhere) to see how you connect to the server and record from Flash (basically it's very similar to doing it with FMS). Up-to-date docs appear to be sparse, but follow some of the links here http://osflash.org/red5 (The mailing list is a subset of the osflash one - find the link on the red5 page)


There maybe hosting that provides Flash Streaming / Comms server setups ready to go, so that could be an option if you want to do more than play at home and don't wish to mess around with your webserver - ask the red5 list or scour the interweb...

Hope this helps a bit - dive in and have a play with FMS / Red5 and I bet Haxe is fairly straightforward if you can setup XAMMP / MAMP / LAMP at home.
