Is there a reason you are not using the OS X  Xcode projects to build OSG?
You should be easily able to add /opt/local/include to the paths in Xcode.

Alternatively could you add it to one of the various "paths" like
DYLD_LIBRARY_PATH or LD_LIBRARYPATH? Maybe there is some variables that you
can pass to the makefile to add /opt/local/ to its path?

Just another reason to move to Cmake... ;-)
