If you only want Grand Canyon surrounding, you may try out little software based on osgTerrain: http://petit-poucet.org

For Gd Canyon, you may use higher resolution data from USGS: DRG or DOQ and NED as DEM.

No need to solve the hassle of manually downloading data and sorting out georeferencement
But terrain generation is *bounded to GPS tracks*.
