Yesterday I create a RSA based sample application where I expose a
remote service using an interface something like the
javax.jcr.Repository. In the backend I used Gemini JPA + MongoDB...
seems to be a good approach to follow.

The only challenging issue in your special case might be to get Jackrabbit
deployed in an OSGi framework, which is where Sling might help you with its
Jackrabbit Server bundle exposing the repository as a service of type
javax.jcr.Repository.
