There is a module "route recording" just for your use ;) Look the correct 
name in English, I have at the moment OsmAnd in my local language.

But I wouldn't do it the way you want. You COULD do it in theory, but it 
isn't a good idea. You would probably need to keep OsmAnd running in the 
background permanently (can be set in the module settings), the file would 
be huge and probably slow down OsmAnd. And, the main reason against - if 
something goes wrong, you could loose the complete recording of the route, 
not just one day of it. 

Record every day (or every trip) separately (split the files), and at the 
end, simply join the individual gpx files together. The module can do it 
for you - it can split the recording at every pause longer than 2 hours and 
after a pause on the next day. If you can, backup the gpx files in the 
meantime - not sure if you will have the possibility to do so. The module 
offers live tracking as well. Even so, I would every week or so copy the 
recording at least at a SDcard, just to have some backup.
