Don't trust them at all. Nothing leaving your laptop/netbook/smart phone should do so unless it's either public information or encrypted on the device itself, and even then, understand that "high strength" crypto today is laughably weak 5 years hence. If there's anything you consider sensitive over that stretch of time, consider not sending it over a computer at all. Should you find yourself in a situation where you think something you might send is that sensitive, also consider whether you need help for your mental health, as paranoia and/or delusions of grandeur are quite serious threats to your well-being, usually much more serious than mere credit card snooping could ever be.
