Alex,

The easiest way to do this might be to write a shim that reads/writes 
the modbus and presents like an owserver on the other end. That way, it 
would just look like a different bus to all the clients. You would need 
some kind of config that sets the 1-wire id and the like. How much of 
the full 18b20 setup you wish to emulate is up to you.
