I've got a few VMs with a self contained domain controller running in them
and haven't come across issues (that I know of), they're great for
developing Solutions on, and you make better use of RAM available running
one VM instead of two.

I remember setting up some DEV VMs on Server 2003 following these steps:

It's on a MSDN blog (Microsoft Employee) posted July 2008, and includes
steps on installing the Domain Controller and DNS roles on the same VM as
SharePoint.

I guess the 2 VM setup with separate DC better matches a real life farm
though.
