The content databases should be a breeze. I've now done it multiple times to resolve various issues (aside from migration) and it's a simple matter.
The config databases - Central Admin and SSP - are more problematic and I'd recommend rebuilding these and any web apps from your build doc. Then just reattach the migrated content DBs, run a full search and you're on your way.
