 (similar) procedure at a client approximately 2 years ago and we did not 
experience any issues in production.  In regards to SQL performance 
recommendations take a look at the following

We are migrating all our MOSS servers across to a new SAN and our DB admin 
suggested using this opportunity to upgrade the SQL boxes.

 - but would also like to get feedback from anyone else who has attempted. Most 
importantly would be any additional info with regards to SQL settings, aliases 
or instance requirements...
