That is not to say it is easy or why would you want to start from scratch with a CRM type application. LookOut Software has a CRM built on SharePoint lists with all the functionality you would expect of a CRM http://sharepointcrmtemplate.com/ and a Stakeholder Relationship Management application with far more complex data relationships than a CRM. The CRM and SRM are based on a small collection of web parts and can be easily modified without being impacted by future upgrades.
