I ran another full crawl this morning and everything is now appearing. AND the document Title is being used. :)

As a result the crawl results are now far fewer and I'm getting no documents returned whatsoever. I'm going to attempt another full crawl before trying to rollback changes. Last resort will be deleting the MetadataExtractorTitle and Office:2 properties and resetting the index.
