If you are talking about using an HTTPS connection to read your e-mail in GMail... there's a Greasemonkey userscript that makes that happen.

But this only attempts to keep your (network) communications with Google's servers private.  You still have the problem that your data (that you want private) is on Google's servers.  And they may give or share that data with other people.
