I have found the following two books to be the best for concepts, structure,
etc.

"Palm Programming, The Authoritative Solution", Glenn Bachmann, SAMS
Publishing
and
"Palm Database Programming, The Complete Developer's Guide", Eric Giguere,
Wiley Computer Publishing
