If the backup bit is set on the application, you will find a copy in the
<user>\Backup folder on your desktop machine after you hotsync.

However, many apps do not set the backup bit by default (figuring you
already have the app and don't want to slow down hotsyncs by backing up
the file every time).  You can manually set the backup bits with a
number of different utilities.  BackupBuddy seems pretty popular.
