Lukasz, Not that I know of. This really shouldn't be a setting - this should be default behavior. Min/max shouldn't change for a variable as you explore your data.

Example: Take disk_out_ref.ex2 and view velocity magnitude. Set ranges to min=10 and max=16, change coloring to temperature and then back to velocity magnitude. The previously defined ranges are reset to global min/max.
