Just make sure you check out the latest superbuild (or the release branch). It has all the fixes needed to ensure the internal harcoded version is set to 5.1.0 (https://gitlab.kitware.com/paraview/paraview-superbuild/blob/release/CMake/DetermineParaViewVersion.cmake)
