Alternatively, ENCRYPT and DECRYPT can also be arrays, you can then call the
command like "${ENCRYPT[@]}". I do this a lot, e.g.:
cmd=(echo "Hello, World!")
printf "Running: %s\n" "${cmd[*]}"
"${cmd[@]}"
