Shellfish With Dill 1/3 cup butter 1 small onion, finely chopped 1/3 cup flour 2 teaspoons garlic, minced 1 cup dry white wine 2 cups milk 1 pound cooked shellfish 2 tablespoons fresh dill, chopped, or 1 to 2 teaspoons dried 1/2 cup parmesan cheese, grated salt, to taste freshly ground pepper, to taste 1 pound pasta Melt butter in a heavy-bottomed sauce pan. Saute onion for 2 to 3 minutes, until it begins to soften. Stir in flour until blended and continue to cook for a couple of more minutes. Add garlic and gradually stir in wine and milk. Continue stirring over medium heat until thickened. Add seafood, dill and parmesan. Reduce heat and cook for a few more minutes, constantly stirring. Serve over the pasta of your choice. Salt and pepper to taste. Serves 4.
