The few times I've converted MIDI to MP3 or Wav I've done it in real time by playing the MIDI file in WinAmp or something and recording it simultaneously with Sound Forge. The MIDI format is totally alien to any sort of MP3 or Wav format. I have heard of programs to convert MIDI to Wav however.
