Neither RF or Bluetooth require line of sight. You're probably thinking of infrared, and I doubt you'll find a wireless headset using infrared. Bluetooth is digital, so you should get better quality and no static, but only a range of 30 feet or less. RF will give you much more range, but maybe not the same sound quality, although there are some pretty good wireless headsets out there using RF.

Hopefully someone else can weigh in with some more specifics. I have a pretty cheap pair of wireless RF headphone that I just use to listen to football games when I'm doing chores around the house. I used to have a pair of bluetooth Technologies headphones that were very nice, and had a range of up to 120 feet, but they were poorly designed and ended up breaking before too long. They aren't made any more, and I haven't seen another pair of headphones using the same technology.
