AFAIK, this won't impact the health of your server at all. It will keep running, and it will reboot without problems. You will also be able to install new patches.

The only thing affected is probably backing out patches. patchrm will look at /var/sadm/patch/<PATCH-ID> for prebackout/postbackout scripts, which will be run during the patch backout process. You have removed these files, so backing out a patch might not give the expected result. If it's really necessary to backout a patch one day, I'd probably copy /var/sadm/patch/<PATCH-ID> from another system where the patch is installed - I think the *backout scripts are generic, and not installation-dependent.

The other files to be found in /var/sadm/patch/1*/ are informative only (patch README and log of patch installation).
