The RAM from quadras will Not work in a PPC 7500.
(I dunno 'bout the video ram, but i would guess it also does not.)
The Quadras are good to use for typing, or for slow web browsing.

At startup, hold down the command and option keys;
this will initiate a rebuild of the desktop.

I hope other folks will help you with the other questions.
