Are there any sinks available nearby that you could ask the class to
wash their hands before using the equipment?  That would at least mostly
solve the problem, I would think. 

The plastic covers would be the easiest way to keep the keyboards clean,
but you would then have to still wash down the covers, and that would
possibly be even harder than wiping the keys themselves.
