You would do well to pick up a good book for win2k and XP. For example,
Mark Minasi's "Mastering Windows 2000 Professional"
http://www.amazon.com/exec/obidos/ASIN/078212853X/qid=1020745207/sr=2-3/ref=sr_2_3/102-9559624-5541752

and "Mastering Windows XP Professional"
http://www.amazon.com/exec/obidos/ASIN/0782129811/ref=pd_sim_books/102-9559624-5541752.

svchost.exe and services.exe are in both XP and win2k. See here for details
of both:

http://support.microsoft.com/default.aspx?scid=kb;EN-US;q250320

http://support.microsoft.com/default.aspx?scid=kb;EN-US;q263201

And also, you do not want to end either of these processes.
