While it's correct that Acrobat 6 allows you to add a watermark, the watermark must be another PDF document. You cannot place a watermark in any other format (i.e., .eps, .tiff or .jpg). If you are generating PDF from a MS Word document there is a way to create a watermark before distilling, see the MSWord help file.
 
For creating a watermark on a PDF after the fact, you can check out pdfzone tools and search for watermark. There are several plugins that enable you to create watermarks.
 
This is just one of them that seems to support Version 6.0.
