I just got Acrobat Professional 6.0 for the main purpose of turning existing
pdfs into online forms. 

Currently employees go to the intranet, print off the form, fill it out,
then inter-office mail it to HR.

I would like them to be able to fill in the form, hit submit and have the
data from the form go to HR.

I was wondering if someone could give me a push in the right direction
regarding the scripts that I would have to use. If you could send me a pdf
form and corresponding script that would be great or even point me to a
website that would allow me to pick apart existing script to see how they
work and how I can get it to work for me.

Any help you can provide would be appreciated.
