Hallo Dean,
I would do this using a batch process which loads a very basic FDF into each of the documents. That very basic FDF would have the header (well, you can't do it without <g>), and only one field name/field value pair, containing the updated value. Even if some files in the folder might not have that field, the batch process would run, because in that case, the import data would simply be ignored.
