This sounds like a lot more work than simply making the PDF directly from Illustrator. If it were me, I'd upgrade my version of Illustrator and be done with it. Get all the EPS files in the Quark doc., each page as a picture. Choose a virtual printer and you will get a postcript file which could be distilled.
