the question is definitely not dumb at all. What/who is dumb in this context is the ones who messed up the user interface in Acrobat 6.

The option to save in older versions is a bit hidden, and you will find it in the PDF Optimizer... Advanced Tool. There, you can set the compatibility level, and when you are done with all other settings, and confirm, you will get the normal Save As... window.

As said, it is a bit hidden, but it does work.

I hope this question is not as dumb as I fear it may be, but here goes...

Is there a way to save from Acrobat 6.0 and create a 5.0 or lower compatible
file?

I have tried Save As and there is no option to save backwards. I have tried
printing
to a lower PDF version but that doesn't appear to work either.
