I have encountered this problem a few times.
I assign it to fields having been lower than the full font size. It seems that Acrobat 6 starts rendering text in fields from a different reference point, so that fields which used to be pretty tight around text are now not high enough.
Check if making the fields taller brings the desired effect.

I haven't seen this problem resolved, though I've seen it reported in several forums.
When I open Acrobat forms in Acrobat 6 on Macintosh OS X 10.2.6, the text in fill-in form fields disappears "below" the field. It seems to come back when the insertion point enters the field, and remains visible while entering text in the field, but when moving to another field, the text disappears.
The same form does not have the problem in Acrobat 6 on Windows 2000.
Does anyone have an explanation or a solution?
