take a look at PDF-Text-Extractor
It has a lot of options for extracting text by file, page range, word count etc.

Are there any products or plug-ins that will allow me to export the text (or better yet.. the keywords) from a PDF document into a text file?
 
I've got a need to program a custom front-end that will allow users to search the full text of a collection of PDF documents. The results will ideally show the filename, the document name, and possibly the number of 'matches' within the document for the search string. Exporting the keywords into a text file will allow me to program these features. Are there any other products that can help in this effort?
