In Quark you can postscript/print a spread. Just click the Spread checkbox
on the Document tab of the print dialog box. Be sure to double your paper
width on the Setup tab.

I can't see any option in Acrobat for changing the way the "Facing" or
"Continuous - Facing" views place the pages in relation to each other. It
appears to assume that these views are for a complete book or magazine,
where
page 1 is at the front with nothing to be displayed to its left.
