Hi Chris,
I'm not familiar with the string replace feature of pdfbox, but I
suggest to use the newest pdfbox version from svn. 0.7.3 is quite old
and there are many fixes and improvements in the current trunk.
Nevertheless try to use an other font just to determine if it is a font
issue or if somethings wrong with your implementation or what else.
