PDFedit selects text as it is organized. PDF creators are absolutely free
how do they organize text objects (which represent visible text) into
the visible text. Therefore we are able to select text only this way.

Yes, this is known issue and it should be changed to yellow in the
current CVS. It was tracked as

Yeah, undo is not implemented yet. However, you can simulate undo
functionality with careful saving and working with revisions.
