Any serious landscape photgrapghy is done on tripod
so amount of light kind of doesn't matter

if you want maximum depth of feild, yes, always shoot at your smallest
aperature, but don't focus at infinity!

Use your depth of field scales and put infinity near the outer edge of the
scale!
