I'm judging the exposure accuracy based on both how the picture looks to my eye and by the histogram display in Camera Raw together. On scenes which approach the general case of an average 18% reflectance gray, I expect the histogram display to be approximate to a Gaussian distibution. I also look to see whether what I consider to be Zone II to Zone IX areas of the scene are windowed in the histogram without clipping.
