I haven't seen the original picture, but I do prefer the color version. It did strike me as a very strong example of tonal accents. The b/w is toned in such a way that all of a sudden the figure of the waitress is not all the prominent in the frame - at least for this very viewer. Color version is more interesting, IMHO.
