you obviously haven't been paying attention. 'Street' photography has never been exclusively or even mainly about "low-contrast B&W captures of people usually against unremarkable backgrounds". I started to refer you to links about the history and mainstream of so-called street photography, but I quickly realised it would involved writing a history of photography itself, so instead I refer you to any decent book on the subject.
