I've done black ink only, and it's okay for grainy images or really big
prints, but for 5x7s and 8x10s it adds more 'grain' to the image, in the
form of the ink patterning.

Mostly I make duotones, with a nice chocolatey brown colour. However,
as the call for more digital black & white work grows out here, I am
more and more seriously considering a move to a quadtone b&w system. I
doubt that I'll put in another 7500 or anything else as big, unless I
can find a used one on the cheap. More likely I'll either convert our
old Epson 1200 (which I don't really want to do because of the pins that
move the paper forward and leave tiny pinhole trackmarks on the print)
or try to find a used Epson 3000 or something. I had a line on a used
3000 already converted to Cone's system, but I think the seller may have
already sold it or reconsidered, since I haven't heard anything on it in
a few weeks.
