In another venue, posterization has been under discussion.   I can see two 
possible ways of dealing with it.

The first one is to use higher ISO, which will increase the noise, and 
therefore the dithering, emoothing out the edges between zones.

The second one is to lower the ISO, reducing the contrast, giving you more bits 
between EV, so that there is more resolution per EV.  

I suspect that the only thing that will work in a lot of cases is to simply 
avoid the photo ever being processed into a JPEG.
